Vegetable Soup with Pasta

Serves: 6        
Preparatiion time
: 15 minutes          
Cooking time: 40 minutes
Ingredients
Method
  1. Fry  the onion and red pepper in the olive oil for 5 minutes in a large saucepan
  2. Add all the other vegetables and cook for 2 minutes.  Add vegetable stock and bring to the boil, simmer for 20 minutes
  3. Add the pasta, simmer for  a further 10 minutes.  Season and serve

Bananas Baked in Lemon Sauce

Ingredients

Pre-heat the oven to 180°C (350°F), Gas mark 4

Method
  1. Whisk the egg and sugar in a large bowl until the mixture is pale and thickened.
  2. Fold in the cornflour and zest and juice of lemons.
  3. Peel the bananas and cut them into chunks (2.5 cms approximately).
  4. Melt the butter in a frying pan and when it begins to foal add the banana slices, cook them for a few minutes until they begin to change colour.
  5. Spoon them into a baking dish and cover with the lemon sauce and grated nutmeg.
  6. Cook in the oven for 20 minutes.

The advantage of this dish is that it can be prepared well in advance and popped in the oven when you need it.
