Healthy recipes on a budget
Vegetable Soup with Pasta
Serves: 6Preparatiion time: 15 minutes
Cooking time: 40 minutes
Ingredients
- 2 tbsp Olive oil
- 1 chopped onion
- 1 red pepper, chopped
- 1 litre vegetable stock
- 400g tin chopped tomatoes
- 2 large chopped carrots
- 125g cauliflower
- 2 medium potatoes, peeled and chopped
- 75g small pasta shapes
- salt and pepper
Method
- Fry the onion and red pepper in the olive oil for 5 minutes in a large saucepan
- Add all the other vegetables and cook for 2 minutes. Add vegetable stock and bring to the boil, simmer for 20 minutes
- Add the pasta, simmer for a further 10 minutes. Season and serve
Bananas Baked in Lemon Sauce
Ingredients
- 1 egg
- 110 grams caster sugar
- 1˝ level teaspoons of cornflour (sieved)
- Grated zest and juice of 2 lemons
- 6 medium bananas
- 25 grams of butter
- Grated nutmeg
Pre-heat the oven to 180°C (350°F), Gas mark 4
Method
- Whisk the egg and sugar in a large bowl until the mixture is pale and thickened.
- Fold in the cornflour and zest and juice of lemons.
- Peel the bananas and cut them into chunks (2.5 cms approximately).
- Melt the butter in a frying pan and when it begins to foal add the banana slices, cook them for a few minutes until they begin to change colour.
- Spoon them into a baking dish and cover with the lemon sauce and grated nutmeg.
- Cook in the oven for 20 minutes.
The advantage of this dish is that it can be prepared well in advance and popped in the oven when you need it.
